You can substitute semi-sweet chocolate chips or carob chips for the blueberries if you want. You will need: Bowl Measuring cups Measuring spoons Whisk Skillet Plastic or silicone pancake turner 1/2 cup flour, sifted 1/2 cup whole wheat flour 1 Tbsp. sugar 1 Tbsp. baking powder 2 egg whites 2 Tbsp. canola oil 1 cup, or more, skim milk 1 cup (1/2 pint) blueberries Combine flours, baking powder and sugars in large bowl and whisk well. Add the milk and whisk well. Add the eggs and oil and whisk to combine. Stir in the blueberries. The batter should not be very thick. If it is, add more milk, a little at a time, stirring well each addition. Heat a nonstick skillet over medium-high heat. Spray with nonstick cooking spray. Use a 1/3-cup measuring cup to scoop out the batter and pour it into the hot skillet. Cook until bubbles bread on the surface of the pancake. Use a plastic turner to turn the pancakes over to cook on the other side. Remove cooked pancakes to a plate, stacking them as you go along. Repeat with remaining batter, spraying with nonstick cooking spray each time. Serve hot or warm (you can reheat these in the microwave oven for 20 seconds or more, if desired). Serve with a small amount of maple syrup or sprinkle with powdered sugar. Makes 4 servings. |
