Breakfast Quesadillas Print E-mail
You will need:
Large nonstick skillet
Medium bowl
Fork or whisk
Plastic or silicone spatula or turner
Dinner plate

4-6 large eggs or 6-8 egg whites
Nonstick cooking spray
1 cup add-ins - crumbled cooked turkey bacon, lean sliced ham, chopped onions, chopped red bell pepper, etc.  Salt and Pepper to taste1 cup shredded lowfat cheese - any kind (Cheddar, Monterey Jack, Swiss, etc) 2 large (10- to 12-inch diameter) whole-wheat tortillas

Place eggs in a medium bowl. Stir with a fork or whisk well. Set aside.

Spray a large nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Pour the eggs into the hot skillet and cook for 1 minute. Use the spatula to move some of the eggs away from the edge of the pan to allow uncooked egg to pour into the open space. Repeat with other edges. When the egg pancake is cooked through, remove it to the waiting dinner plate by sliding it from the pan. Cut the egg pancake in half, into 2 half-circles. Set aside.

Place a tortilla on a clean surface. Place one egg half circle on the tortilla (you will only use half the tortilla). Sprinkle with salt and pepper and any add-ins you want, never going over one-half of the tortilla. Sprinkle with half the cheese and fold the empty tortilla half over the filled half. Repeat with remaining tortilla and other ingredients.

Spray the skillet again with nonstick cooking spray and heat over medium heat. When the skillet is hot, carefully place the folded tortillas in the skillet, being careful not to spill the fillings. Cook for about 2 minutes, until the undersides are golden and carefully flip them to cook on the other sides. When the tortillas are golden, remove them, place them on plates and cut them each into for wedges each. Serve hot. Makes 2 servings.
